Short answer: yes, about as acidic as any other coffee. Brewed coffee measures between pH 4.85 and 5.13 across origins and brew methods, and a few hundred milligrams of mushroom extract in a four-gram scoop does not move that; no published measurement says it does. "Low-acid mushroom coffee" is a roast, bean and dose story, not a mushroom story. The number that actually matters for your stomach is not the pH of the cup but how much acid the cup tells your stomach to make, and that is set by roast chemistry: in volunteers, a dark roast stimulated less gastric acid than a medium roast at the same caffeine. On reflux, the largest analysis found no association between coffee and the disease, but coffee does trigger symptoms in people who already have it. The fourth row is the one to keep. A man with a sensitive stomach is not reacting to the pH of a 240 ml drink, which is milder than orange juice or cola; he is reacting to what the coffee does once it lands. Coffee has no calories, volume or acidity that could explain its effects on the gut, so those effects are pharmacological: it stimulates gastrin, gastric acid and colonic motility, and the evidence on the lower oesophageal sphincter is conflicting2. That is why "low acid" on a label tells you almost nothing unless it tells you how the coffee was roasted or treated.
Do the mushrooms make coffee less acidic?
No, and it is worth being precise about why the claim exists. A typical mushroom coffee scoop is three to five grams, most of it coffee. The mushroom extract is a few hundred milligrams of a near-neutral powder. Dissolved in a cup, that quantity cannot buffer a solution of coffee acids in any measurable way, and there is no published pH comparison showing that it does. Where a mushroom blend does taste softer, one of three other things is happening: it uses less coffee per serving than a standard cup, so there are fewer coffee acids and less caffeine in the mug; it is a darker roast; or it carries coconut milk, MCT oil or creamer, which coat and dilute. Those are real effects. They belong to the recipe, not the mushroom, and the same recipe would soften a coffee with no mushrooms in it at all. Mushroom coffee and acid reflux
Two findings frame this. A meta-analysis of the observational studies found no significant association between coffee intake and gastro-oesophageal reflux disease at the population level6; coffee does not appear to give people the condition. But in people who already have reflux, coffee is one of the most commonly reported symptom triggers, through acid stimulation and possibly through the sphincter2. Mushrooms change neither side of that. One more practical point, since it is the most common confusion in this category: if a mushroom coffee has stopped your heartburn, check its caffeine. Who should be careful
- Diagnosed reflux, gastritis or a history of ulcers. Coffee is a symptom trigger, not a cause, and mushrooms do not change it. Dark roast, with food, one cup.
- Anyone on a latte-style blend with MCT oil or coconut milk who blames "acid" for the discomfort. Cramping and loose stools from those fats are a different mechanism; the gut-effects guide separates them.
- Anyone stacking cups. Acid stimulation is dose-related. The daily caffeine ceiling is also, roughly, a daily acid ceiling.
Reading a "low-acid mushroom coffee" label
- A pH number. If the label claims low acid and gives no pH, the claim is a flavour description. If it gives one, compare it to 4.85 to 5.13.
- The roast. "Dark roast" is the one word on a label that the acid-secretion evidence supports3.
- "Steam-treated" or "stomach-friendly". A real process with published chemistry5, rare in mushroom blends.
- Grams of coffee per serving. Half the coffee is half the acid. It is also half the caffeine, which may or may not be what you wanted.
- The mushroom line. Whatever it says, it is not why the cup is gentler.
